Last summer, we shared preliminary news that a craft beer spot looked to be heading to the former Quickly spot at 1735 Polk St. This week, we learned via Eater that the new spot, set to debut this summer, will be Buffalo Theory, "a craft beer focused restaurant and bar featuring New American fare from executive chef Tim Luym." 

The highlight of the new pub and restaurant will be the brews: 30 tapped beers on hand and curated by Ted Kim, a self-described "beer geek" and proprietor of Steins Beer Garden and Restaurant in Mountain View.

We're told that Kim has carefully selected the beer offerings and will serve several local favorites as well as "obscure national and international beers." He also said that new staff will undergo rigorous training to be qualified to work behind the bar. “We want Buffalo Theory to be a place where you can not only enjoy your go-to craft brew, but also make a well-informed decision about trying something new.”


Luym, an award-winning chef deemed worthy of three stars and a rising star chef and entrepreneur nod from the Chronicle for his work at Poleng Lounge (which has since closed), plans to create "bar bites" inspired by Spanish tapas, influenced by Filipino, Chinese, Spanish and Japanese flavors to pair with the libations. There will be an array of street-food inspired dishes with an upscale feel.

Luym has been consulting for various restaurants since the 2010 closing of Poleng Lounge (which, as we've reported, may have been home to a ghostly presence), but told us that he's "excited to be cooking again after spending some time consulting, traveling and learning more about the wonderful world of food."

"I’m particularly excited about the progress of Filipino flavors and ingredients, and incorporating them into everyday New American cuisine," he added. And more importantly, he said, "The icing on the cake is going to be discovering pairings with the great beer selection on hand!”

As for the name of the joint, here are the origins: 

The "Buffalo Theory" is the notion that as the weakest and slowest buffalo are attacked and killed, the collective herd becomes stronger and faster. Likewise, alcohol attacks and kills the slowest and weakest brain cells first thereby making one smarter and more intelligent. At Buffalo Theory, they hope to prove this theory with a prodigious selection of craft beer and wine, inventive cuisine, and a boisterous and lively atmosphere all intelligently orchestrated to prove that what once was simply a theory is now a veritable truth. 

We asked the owners why they chose the Polk neighborhood, and Kim told us, "The simple answer is that we love the neighborhood. The Polk Gulch has a great mix of different kinds of restaurants and bars and there is a lot of foot traffic, especially on nights and weekends. We felt the neighborhood presented a great place to set up shop and add to the eclectic dining landscape."

The restaurant and pub are hoping for an early-summer opening. We'll keep you posted when the new spot goes live.
