Ice cream aficionados have a lot to choose from in the Mission, from stalwarts like Bi-Rite to newcomers like the recently opened Garden Creamery.

Now, a familiar player is entering the arena: Smitten Ice Cream, which has gained a following in Hayes Valley, Pac Heights, and the Marina for its churned-to-order flavors, made with liquid nitrogen.

Smitten got its start in the Mission as a roving red wagon, which will be on display at the new location. In honor of today's debut, the new shop at 904-908 Valencia St. (at 20th Street) will be offering a pay-what-you-will day, with all proceeds benefiting La Cocina, the Mission's culinary incubator for low-income women and immigrants.

The shop is also teaming up with Mission culinary neighbors to create new flavors; today's debut will include a turmeric gold latte flavor from Samovar Tea, and in the coming weeks, you can also expect flavor team-ups with Dandelion Chocolate (Mission hot chocolate) and Mission Cheese (chevre and apricot).

Hours for the new Smitten are noon-10pm daily.
