This spring, Hayes Valley will welcome three new restaurants: a fast-casual rotisserie, an Italian pasta spot, and a sushi restaurant. All are expected to open in the neighborhood in the next two months, if everything goes as planned.

RT Rotisserie
101 Oak St.

Sarah and Evan Rich, the husband-and-wife chefs behind Hayes Valley's Rich Table, announced last fall that they will open RT Rotisserie at 101 Oak St., formerly home to Mandarin Villa. Now, they're getting close to an opening date.

The casual, counter-service restaurant will offer rotisserie chicken, porchetta and cauliflower, brined in buttermilk, umami powder, garlic and Douglas fir, brushed with a smoked, roasted garlic oil, and finished with fresh herbs and lemon.

In addition to whole items to go, all three mains will also be offered as sandwiches, or in a seasonal salad. Chickens will be sourced from Rocky Jr., and porchetta will be supplied by Dogpatch-based Olivier's Butchery. The restaurant will also offer one draft beer and four wines ($10-13/glass): one red, one white, one rosé and one sparkling wine.

"RT Rotisserie is a counter-service restaurant, but we’re still as deeply committed to serving people really amazing food here as we are at Rich Table," Sarah Rich said in a statement.

Expected to debut in April, the new restaurant will be open seven days a week, from 11am to 9pm.

A Mano
450 Hayes St.

Prolific San Francisco restaurateur Adriano Paganini (Beretta, Starbelly, Super Duper Burgers, Delarosa, Lolinda) has finally revealed more about his long-gestating restaurant project at 450 Hayes: it will be an Italian restaurant focusing on handmade pasta, called A Mano.

Inside Scoop SF reports that A Mano's kitchen will be headed by Freedom Rains, who's also the chef of Paganini's Cow Hollow restaurant, Belga. He'll offer fresh pasta made in-house each day, a pair of pizzas (a margherita and a rotating seasonal option), and cocktails with a "California twist."

A Mano is currently set to open in May; Paganini also has an eye on opening yet another restaurant in Divisadero's former La Urbana space, but it's unclear if that project is going forward or what kind of restaurant it might become.

Robin
620 Gough St.

A new seasonal omakase restaurant is on its way to 620 Gough St.—right next to doughnut shop Johnny Doughnuts, which is also expected to open this spring.

Run by former Akiko's chef Adam Tortosa, the restaurant was originally set to be called The Starling. But according to Eater SF, there was a dispute with a new bar that also wanted to use the moniker, so the restaurant will now be called Robin, after Tortosa's mother's middle name.

Set to open last December, the restaurant has been delayed in the permit process, but it should open in May. Tortosa says it will be a more relaxed, upbeat alternative to the city's growing swath of omakase spots, with furniture, ceramics, and design elements sourced from California, instead of Japan.
