A new fine-dining restaurant called Birdsong is on its way to 1085 Mission St., the former location of AQ, which shuttered early this year.

Inspired by the Pacific Northwest, the new SoMa spot is headed up by executive chef and owner Chris Bleidorn, who was previously at Saison, Atelier Crenn, Benu and Alinea. 

A press release issued today explains that while Bleidorn grew up in New England, the chef has lived in California for many years. He's interested in preserving techniques of the past, such as smoking and dry-aging meat, fermentation, and cooking with open fire, all with a modern twist. Guests will be able to see these cooking techniques at Birdsong's open kitchen, with 10 seats lining the chef’s counter.

A full menu has not yet been announced, but the team behind Birdsong intends to incorporate wild game found in the Pacific Northwest, including elk, buffalo, and boar. Other key ingredients will include cold-water shellfish, mushrooms, and berries.

Diners will also be able to pick between a 12-course tasting menus or an à la carte menu for the dinner-only restaurant. Larger groups will also be able to order dishes for the entire table, such as a whole-roasted aged duck, lamb shoulder or whole trout. 

Since the restaurant will feature the cuisine and techniques of the Pacific Northwest, craft beers from Oregon, Washington and British Columbia will be highlighted in the drink offerings, according to today's press release. There will also be both domestic and European wines on offer.

Birdsong is targeting a winter opening on Mission Street; stay tuned for more details as the new project progresses.
