Chicago Culinary Scene Expands with Two New Filipino Restaurants in North MayfairSource: Facebook/Umaga Bakehouse

Chicago's culinary landscape just got a pinch more flavorful with two new Filipino eateries opening up, adding their unique twists to classic dishes. Kathy Vega Hardy, following the closure of her food stall last year, has now opened a sit-down restaurant at 5914 W. Lawrence Ave. According to the Chicago Sun-Times, the chef said, "I couldn’t be happier. [The restaurant is] five minutes away versus an hour and a half drive to downtown. And I get to be with my kids."

Hardy, who presents a fusion of traditional fare and such innovations as Scotch eggs with longaniza and baked ube doughnuts, is part of a trend that's seen new Filipino spots like A Taste of the Philippines join Chicago's longstanding favorites. Meanwhile, just a short distance from Filipino supermarket Seafood City, Robert and Kissel Fagaragan are bringing a taste of the Philippines to the mornings with their Umaga Bakehouse. Their bakery at 4703 W. Foster Ave will shine a light on Filipino rolls pandesal and ensaymadas in North Mayfair.

The husband-and-wife duo behind Umaga Bakehouse met in the family's bakery in California. They sought out a better work-life balance after a grueling stint with another bakery, a sentiment that resonates with Hardy's philosophy. Kissel told the Chicago Sun-Times, "At the end of the day, Kyle, our daughter, is the most important."

Adding a sweet touch to their savory offerings, Umaga Bakehouse also shared a Halo Halo recipe with WGN-TV. This popular Filipino dessert layers shaved ice with an assortment of sweetened fruits, beans, and yam, then crowned with evaporated milk and a scoop of ice cream. The opening of these restaurants underscores a community's commitment to entrepreneurial spirit, family values, and the colorful tapestry of Filipino cuisine making its mark on Chicago.
