Sebo to Become Greek Sandwich ShopFacebook/SouvlaSF
Breaking gyro news, folks -- it appears that 517 Hayes Street, most recently home to Sebo (which closed this past weekend), will soon reopen as a greek sandwich shop.

An alcohol license application filed yesterday reveals that the new tenant will be a restaurant called Souvla. According to a Tablehopper article from early last year, Souvla specializes in spit-roasted fast-casual Greek food made with fresh, local ingredients. They've been limited to catering special events and pop-ups as they've searched for a location for their first restaurant. Apparently that search is over. Souvla's Twitter reveals that the Hayes Valley location will offer "delicious sandos," along with Greek frozen yogurt and Greek wines on tap. The opening is slated for "early 2014."
