French Cream Puff Bakery Coming To The Lower HaightFacebook/Choux
We finally know what's going to fill the vacant storefront at 248 Fillmore Street -- and it's like nothing else in the neighborhood.

The address has been claimed by a bakery called Choux (pronounced "shoo"), which specializes in French cream puffs. Choux is run by baker Laura Athuil, who hails from Nice, France. Laura moved to San Francisco from France earlier this year to launch Choux, which she has been operating primarily as a catering business while prepping to open a permanent location. With Choux, Laura makes "traditional and exotic, wonderful pastries" -- mostly cream puffs, with a variety of toppings and fillings. ("Choux" is a French term for the sweet dough used in such creations.) A rep for the bakery tells us the menu is still being refined, but it might include options besides cream puffs as well. They chose the Lower Haight address primarily because of its convenience to the rest of the city. The Fillmore Street shop will house Choux's bakery, so the central location will help them fulfill catering orders around San Francisco. If all goes according to plan, look for Choux to open in the mid-February timeframe. We'll keep an eye on it.
