Stop by 610 W. Lake St. in Whittier and you'll find Trio Plant-Based, a new vegan soul food restaurant from Sarah and Dan Woodcock and friend Louis Hunter. So far, it's been well-received: it's got a five-star rating out of eight reviews on Yelp.

The restaurant's dishes feature local, organic and fairly traded ingredients, per its website. It opened in late September following a successful Kickstarter campaign and several pop-ups, reports City Pages.

On the menu, plant-based offerings include the smoky house ribs with barbecue sauce, mac and cheese, cornbread with maple butter, a grilled cheese sandwich and more. Tomato soup, salads and desserts like peach cobbler are also on offer. See the full menu here.

Seed Cafe

Another vegan restaurant, Seed Cafe has debuted at 3252 W. Lake St., Suite B.

The restaurant makes all of its sauces in-house, does not deep-fry any of its food and uses fresh, high-quality ingredients, per its website.

Look for the Breakfast Bowl with coconut chia seed yogurt, oil-free granola, banana and hemp seeds, or classic avocado toast with hemp seed, Aleppo pepper, Maldon sea salt, radish, micro greens and a splash of citrus in the morning. For lunch, expect salads, grilled cheese sandwiches and rice bowls. Here's the full menu.

Brim

Now open at 2919 Knox Avenue St. in Uptown is Brim, a vegetarian-friendly eatery from married couple Patrick and Kate Sidoti.

The counter-service restaurant is cashless and "serves bowls comprised of a rice base, sides, proteins and dressings dished from a string of Le Creuset Dutch ovens," according to Eater Twin Cities.

Make your own custom creation or choose one of the bowls on the menu. Signature options include Plant Protein with quinoa, kale, golden beets, super seed crunch and pesto, or Market Chicken with greens, seasonal roasted roots, goat cheese, roasted organic chicken and citrus balsamic. Here's the full menu.

Peace Coffee

Another new addition is Peace Coffee at 901 S. Marquette Ave. in the AT&T Tower downtown. This is the coffee roastery's fourth location in the Minneapolis area.

The roastery features a wide variety of fair trade and organic beans, including the signature Twin Cities Blend with hints of almonds and caramel; the milk chocolate Peruvian with apricot tones; and the light and fruity Ethiopian. Check out the website for a full list of roasts. Inquire about the subscription program here to have coffee beans delivered to your front door.
