Scottsdale's dining scene is gearing up for a taste of the tropics as Hawaiian Bros, the purveyor of Hawaiian comfort food, is set to replace the now-closed Red Robin at 8970 E. Shea Blvd. The quick-serve restaurant chain received approval from the Scottsdale Development Review Board on June 20 to build a new 2,909-square-foot eatery, which will feature a blend of dine-in, carry-out, drive-through, and pick-up options, according to the Phoenix Business Journal.

The corner of Shea Blvd. and 89th Place is poised for transformation as the existing structure will be demolished to make way for Hawaiian Bros' unique take on fast food that includes island-inspired dishes such as chicken glazed with various sauces and the quintessential macaroni salad alongside tropical Dole soft serve ice cream, Hawaiian Bros aims to satisfy a taste for island fare, right here in the desert. The new Scottsdale location, one among several planned Valley openings over a condensed timeframe, is part of an ambitious push by the chain's franchise partner Stine Enterprises, which inked a deal last year to open 50 Hawaiian Bros locations in Arizona, as ABC15 reported.

But the Scottsdale establishment isn't just about food; it's also about innovation in service. Hawaiian Bros' expansion includes a notably progressive feature: two separate drive-thrus within the same building, catering to both traditional drive-thru customers and those preferring pickup orders, including those placed via third-party delivery services.

Behind the project, Excel Engineering steps in as the designer with 41 North Contractors appointed as the general contractor, this collaboration sets the stage not simply for construction but for the immersive island experience Hawaiian Bros is keen to offer; and Stine Enterprises is no stranger to the Arizona food service landscape, already managing several Jack in the Box and Denny’s restaurants in the state, their expertise is expected to open avenues for Hawaiian Bros to flourish within Arizona's rapidly diversifying culinary community.
