Frankin Chou, the visionary behind this venture, aims to redefine Vietnamese dining with Viet Nom’s "small, modern Vietnamese pho shop with a concentrated menu." Firing up the grills, diners can feast on the Pho Nom bowl - a dish laden with bone-in short ribs, meatballs, and boneless short ribs, as well as a unique noodle-less pho broth teeming with bone-in short ribs and a medley of vegetables. And for those who lean toward greens, a vegetarian version of their signature pho is also in the lineup, according to a statement obtained by Eater San Diego.

Moreover, the restaurant doesn't shy away from flaunting favorites from Chou's other establishments. Among them are the notable chili tamarind wings from his fried chicken depot Bok Bok Dok, and the Galaxy lemonade - a concoction combining lychee and butterfly pea tea - originally from Steamy Piggy. Sidekicks such as shrimp spring rolls, fried egg rolls, and red bean sesame balls also make a guest appearance on Viet Nom's menu. For those who fancy a dip, deep-fried dough sticks known as crullers stand ready to plunge into the fragrant pho.

With a presence already established by SDB Restaurant Group's selection of eateries, including Kearny Mesa's Formoosa and Yun Tea House and Point Loma's Bok Bok Dok, the forthcoming venture, a ramen house called Oi-Shiba, is set to make its mark in Pacific Beach this coming June, born from the success of its predecessors, as reported by Eater San Diego.
