According to San Antonio Express-News, Rico Torres expressed a desire to branch into something they are passionate about, saying, "And something that could possibly be replicated as well." With the success of Mixtli propelling them forward, which includes recognition from Food & Wine magazine and a James Beard Award semifinalist nomination, expansion seems to be firmly on the table.

Greenhouse won't just serve your average cup of joe; they're bringing in the big guns with a top-tier La Marzocco espresso machine to fuel a menu featuring espressos, cortados, cappuccinos, and Americanos. These premium brews will be paired with curated coffee beans roasted by San Antonio’s Estate Coffee Co., among other beverages like drip coffee, cold brew, chai lattes, matcha drinks, kombuchas, and teas, according to San Antonio Express-News.

But Greenhouse aims to more than satisfy a caffeine craving. It's also rolling out a smorgasbord of baked goods, all gluten-free, including croissants, focaccia, and more, crafted under the watchful eye of Mixtli's executive pastry chef Shelby Mitchell. "The breakfast and lunch program will draw from Mixtli’s deep pool of talent," Mixtli's owners told San Antonio Express-News. Also on the menu are overnight oats, salads, and hearty breakfast burritos, ensuring that visitors can grab a quick bite to eat or linger over a leisurely brunch.

The space itself holds sentimental value for Galicia, who has lived in the area for over two decades and got his start in the culinary world just a stone's throw from Greenhouse's new location. Moreover, the shop's look, marked by a cool green color scheme and a nod to yesteryear aesthetics, is sure to make it a stylish new addition to the local café landscape, adding yet another chapter to Mixtli's evolving story.
