Wabi Sushi, a compact new sushi shop from chef Dongwhun Lee, slipped into Flower Mound this spring and is already turning heads with playful twists on Japanese comfort food. The small storefront turns out straightforward staples like rolls, nigiri, and rice bowls, but it is the signature riffs that are getting early buzz, including inari samplers, korokke potato croquettes, oversized “sumo” dumplings, and rotating baked volcano rolls on the specials board.
The Town of Flower Mound announced the opening on May 23, placing Wabi Sushi in Long Prairie Plaza next to a Cold Stone Creamery at 1450 Long Prairie Rd., Suite 110. The town notice calls out nigiri, sushi rolls, and rice bowls among the offerings, according to the Town of Flower Mound. That confirmation lines up with online listings that already show the shop available for both carryout and delivery.
Menu highlights
Wabi Sushi’s online ordering page leans into a compact, approachable menu that reads like it was built for quick pickup and delivery runs. The restaurant’s ToastTab ordering page lists specialty items such as korokke potato croquettes and baked volcano rolls alongside classic rolls, rice bowls, and dumplings, according to ToastTab. The menu also features sushi pockets in the form of inari samplers offered in multiple-pocket options, and early write-ups point to those as an easy, shareable entry point for beginners.
Chef background and what is next
Wabi Sushi is the latest project from chef Dongwhun Lee, who picked up his sushi skills while living in Los Angeles and says he has worked as “Chef AK” at Japanese restaurants since 2006. “My goal is always to make sushi accessible, both for sushi lovers as well as sushi beginners — to remove any barrier and make everything easy to eat,” Lee told CultureMap Dallas. The outlet also reports that Wabi Sushi took over a former Parlor Doughnuts location and that Lee plans to roll out sushi tacos this summer and a shrimp ramen in the fall.
Ordering and permits
Town permit records show a certificate of occupancy for the suite was finalized in early February, which cleared the way for the spring debut. For current hours and to place pickup or delivery orders, Wabi Sushi is listed on delivery platforms such as Uber Eats, while the town’s permit listing documents the official buildout and certificate of occupancy for the space. Newcomers looking for a quick read on Lee’s playful, accessible approach to sushi might want to start with the inari sampler and the korokke.
