
Agricole Hospitality heats up Houston's EaDo and opens its latest venture, HiWay Cantina Tex-Mex Bar & Grill tomorrow. HiWay Cantina, situated at 1201 St. Emanuel where the modern Gulf Coast-flavored Indianola once stood, will be serving up the classic Tex-Mex flavors.
Italian hit Coltivare and the pizzeria Vinny’s, Morgan Weber, along with partners Vincent Huynh and Ryan Pera have infused their new restaurant with personal touches of tradition and memories, as the Houston Chronicle reports. “It would be disingenuous if it was something that didn’t speak to our experience with Tex-Mex.” Weber told the Chronicle.
The team at Agricole refused to cut corners on food or design. Offering more than just the usual rice and beans combo, HiWay Cantina introduces lighter fare like octopus escabeche and watermelon jicama salad, alongside Tex-Mex must-haves like mesquite-grilled fajita al carbon and chile con carne. Over the summer, when the Agricole team shuttered Indianola and Miss Carousel, they hinted at reincarnations better suited to pandemic-era dining habits, with Agricole admitting they had "missed the mark" on what EaDo customers were craving, as Chron.com reported.
Amid over 125 seats inside and outside, patrons can also find select references to Texas history, such as the "Black Bean" print, a nod to a grim moment from the Texas Revolution. According to the Chronicle's interview with Weber, they aim to combine these elements to echo echoes of their other ventures, including EZ's Liquor Lounge, which gained recognition in Esquire magazine.
