His barbecue journey took a notable turn when he stepped in to continue the legacy of Shepherd Drive Bar-B-Q, a historic Black-owned establishment that opened in 1934. Jerry Pizzitola eventually acquired the business and renamed it, hiring his long-time friend Carlton Gould as pitmaster.

Throughout his tenure, Pizzitola's Bar-B-Cue adapted to changing times, combining old-school charm with modern smoking techniques. As reported by the Houston Chronicle, under Pizzitola and general manager Tim Taylor's leadership.

Pizzitola's BBQ is now set to celebrate its 88th year in operations, with a weeklong event that promises to feature a new 6-pound beef shank among other specials. Pizzitola's legacy is carried forward by the Maddens and Maidas, who have updated the menu and renovated the establishment while keeping the Pizzitola name front and center. According to a statement, the restaurant is honoring both its past and its present with this anniversary celebration.
