Las Vegas just got a taste of the sea with the opening of Bazaar Mar, the newest offering from the José Andrés Group. Planted firmly on the Las Vegas Strip inside The Shops at Crystals, Bazaar Mar is bringing an interactive dining experience all about shareable seafood dishes. News 3 LV reports that the restaurant's debut marks José Andrés Group's first collaboration with Simon Property Group, setting its sights on expanding the Vegas culinary landscape.

At the helm of Bazaar Mar is Manuel Echeverri, introducing a menu that weaves together the freshest of global seafood with Spanish techniques. Sam Bakhshandehpour, CEO of José Andrés Group, expressed excitement over the establishment's contribution to Vegas' reputation as a culinary hotspot. "We are proud that our Vegas restaurants have contributed to the city’s position as a top culinary destination for many years," Bakhshandehpour told FSR Magazine in a statement. The seafood line-up encompasses dishes from across the seas, like Panama's Open Blue Cobia, Ora King Salmon from New Zealand, and Spain's Balfegó Tuna.

The design by Lázaro Rosa-Violán Studio features a myriad of oceanic elements, giving diners a sense of seaside whimsy. An oversized mural greets guests with a surreal coastal scene, and the open kitchen boasts a fish display that promises a side of showmanship with your meal. José Andrés Group has ensured that the wine list reflects the Spanish influence with selections from family-operated wineries, while cocktails get the Bazaar treatment with elements of drama to complement the dining experience.

Adjacent to Bazaar Mar, Bar Centro is gearing up to serve as a morning coffee and pastry spot, transitioning into a haven for cocktails and Spanish snacks as the day turns to evening. Patrons will find a variety of caviar offerings and desserts to indulge in. The bar itself, tucked away on the mezzanine level, promises an escape with its changing menus—from coffee to cocktails, and setting, complete with custom banquettes and feathered light fixtures that might remind one of Seville's peacock-adorned parks.

While Bazaar Mar is rolling out dinner service seven nights a week, Bar Centro will follow suit later this month with its extended hours and offering. Bazaar Mar is the latest in a string of culinary ventures by José Andrés Group, joining the ranks of established venues like Bazaar Meat, China Poblano,é, and Jaleo in Las Vegas.
