Notably, Perez is branching out from his partnership with chef Enrique Olvera that included an enterprise of restaurants like Atla, Damian in Los Angeles, and the distinguished Pujol in Mexico City, under the Casamata hospitality group. Although Perez has departed from his CEO role at Casamata, he "remains a partner and friend," he disclosed in a statement obtained by Eater New York. Santo Taco stands in an unusual cohabitation with the existing Mexican haunt, La Esquina, which is downsizing but not closing as some have mistakenly rumored.

Over in Williamsburg, Esse Taco, affiliated with the same hospitality group but steered by Olvera, launched to the public back on May 2. This fast-casual destination emphasizes authentic Mexico City-style tacos and boasts a menu with premium cuts of meat served as singular pieces rather than the usual chopped filling, noted Greenpointers. The heirloom corn tortillas, a staple of the establishment, are freshly made every day from nixtamalized masa.

Santo Taco, Perez's newest venture, has similarly high ambitions to bring quality and fine dining principles to a more casual and accessible setting. "There’s nowhere to hide" in the inherently simple menu, Perez told Eater New York. The taqueria’s offerings only consist of five well-crafted tacos, including a steak trompo and a seasonal vegetarian option, showcasing a commitment to ingredient quality and transparency in sourcing. Despite the focus on tacos, they will also be served by drink options like agua santa with palo santo and traditional Mexican sodas.
