
Hill & Bach Cellars, a Paso Robles-based project from Julie and Richard Lee, is headed to Boerne’s Hill Country Mile with a new tasting room in the town’s historic Main Street district. The Lees are planning an indoor-outdoor setup built around live music, small plates and a roomy courtyard meant for twilit pours and a little two-stepping. The space is expected to open in spring 2026, and the winery is already taking online orders for its Paso Robles bottlings, as reported by CultureMap San Antonio.
The couple will convert the Old Jacob Luckenbach House at 265 Main St. into Hill & Bach’s Boerne tasting room, according to CultureMap San Antonio, bringing Paso Robles vintages straight to the Hill Country Mile. CultureMap notes the Lees, longtime Houstonians who bought a Paso Robles vineyard after Richard sold his oil company, moved to Boerne in 2018 and began sketching out the tasting-room project.
Historic Luckenbach House Gets A Careful Restoration
“It was extremely important to the new owners…to preserve the original limestone building with all of its Texas charm,” a winery representative wrote in a newsletter, according to CultureMap San Antonio. The Lees brought in Boerne architect Frank Valadez and presented plans to the Boerne Landmark Commission as part of their renovation push, signaling they are trying to freshen up the space without sanding off its history.
Design And Programming Aim For A Social Night Out
Renderings show a patio deck, shaded seating and green space wrapped around the restored house, and the company promises events and a wine-club model to anchor the tasting-room calendar, according to MySanAntonio. The outlet reports the Lees are pitching “ultra-premium” wines paired with small bites and live music, positioning Hill & Bach as another reason to stick around the Hill Country Mile after dark.
Timing And Permitting: Dates Have Shifted
Local reporting shows the project has been winding its way through permitting and construction. The Boerne Life followed early TDLR filings and interior renovation work, tracing the buildout from paperwork to demolition. A Community Impact reporter also quoted a winery representative saying the opening timeframe was updated to January–February 2026 as the team worked through permits and construction details.

The Lees’ portfolio includes playful names such as Bless Your Heart (a Grenache-based rosé), Gunpowder & Velvet and Cactus Bloom, and their site lists wine-club membership options and pre-opening online ordering, according to MySanAntonio. For Boerne, the tasting room adds another evening destination to a Main Street that has been steadily courting food and drink spots, with operators chasing a mix of tourism and neighbor-focused programming.
