The Toasted Yolk is on its way to Round Rock, with a new cafe planned for the shopping strip next to the H‑E‑B Plus at A.W. Grimes and E. Palm Valley. The chain aims to bring its breakfast-and-brunch lineup to one of the city’s busiest retail corridors. Company and state records show the project moving forward, although the brand has not set a firm grand-opening date. If the buildout plays out as filed, the restaurant will serve as a sit-down stop for shoppers and commuters moving through the area.
State Filing Spells Out Size And Price Tag
According to a Texas Department of Licensing and Regulation project page, the buildout is registered as Project No. TABS2025016618 and described as a 4,000-square-foot, second-generation restaurant renovation in the H‑E‑B Plus shopping strip at 1700 E. Palm Valley, Suite 300. The filing lists an estimated $750,000 construction cost and shows a June 1 start with a Sept. 30 completion date, and the project is marked "Review Complete" in the state system.
Brand Flags Round Rock As “Coming Soon”
On The Toasted Yolk's website, the Round Rock location appears as "Coming Soon 2025" at 1700 E Palm Valley, Ste. 300. The locations page also shows typical cafe hours and a waitlist feature, indicating the spot is expected to operate as a full breakfast-and-brunch concept once doors open.
How It Fits Into Round Rock’s Breakfast Scene
Community Impact first noted the TDLR filing and pointed out that the cafe will sit beside the grocery anchor in the strip. The arrival comes as the chain adjusts some Central Texas locations - Community Impact previously reported that the Cedar Park Toasted Yolk closed in October 2024 - and it is expected to add another sit-down breakfast option for shoppers along the corridor.
When Locals Might Get A Table
For now, the public opening is still to be determined. The state record lays out projected construction dates, but neither the brand nor city permitting has posted a confirmed grand-opening. Residents eager to be first in line can keep an eye on the Toasted Yolk website for any waitlist or soft-open notices and watch the H‑E‑B strip for signs of construction activity.
