Able Baker Brewing is gearing up to open an Able Baker Bomb Shelter in Centennial Hills, taking over the former Montana Meat Co. space at 6371 Centennial Center Blvd, with owners targeting a spring debut.
According to the Las Vegas Review‑Journal, the expansion was first teased in a Facebook reel, and city records show the initial building permit for the site was issued in August. The project appears in a land‑use filing on the City of Las Vegas agenda under an application from Able Baker Bomb Shelter, LLC, with KRG Las Vegas Centennial Center, LLC listed as the owner.
The address was previously home to a 24‑hour neighborhood fixture. Montana Meat Co.'s Centennial Hills restaurant closed after service on Dec. 31, according to Eater Vegas. Able Baker, meanwhile, first planted its flag downtown in September 2019, rolling out its Atomic Age‑themed taproom and beers, including its now‑signature Atomic Duck IPA, per Eater.
The downtown taproom is also home to Arts District Kitchen, and the Review‑Journal reports that crew will help shape the Centennial Hills menu while the new spot builds out its own kitchen. That same reporting calls out existing Arts District Kitchen standouts like tikka masala fries, a pork belly rice bowl and a half‑pound pastrami sandwich, a lineup that hints at the kind of neighborhood comfort food the Bomb Shelter could lean on.

City planning documents detail a request for a special‑use permit covering a 5,128‑square‑foot liquor establishment that combines on‑premise service with craft alcohol production, plus a 2,315‑square‑foot outdoor patio. Staff recommended approval, according to the City of Las Vegas. The filing also seeks a waiver to allow zero‑foot separation from a nearby school where a 400‑foot buffer is normally required, meaning the proposal will go through public hearings before any final vote.
Brand And Timeline
Able Baker leans into Atomic Age lore hard. The brewery's own description says the name nods to the Able and Baker nuclear tests at the Nevada Test Site and celebrates the so‑called "Atomic Duck" legend, which doubles as both the taproom mascot and the flagship IPA. With permits in play and construction activity already visible at the building, owners expect to transform the former 24‑hour space into a full‑service neighborhood brewery and kitchen in the coming months.
