
Concept Coffee, a compact new cafe from Sacramento chef Scott Ostrander and coffee roaster Ty Manukyan, quietly opened this week in Midtown at 1912 P St. The plan was a low-key debut. Instead, neighbors quickly filled the space, turning the first days of service into something that felt a lot like a full-blown grand opening.
The shop leans hard into the morning rush, pairing a breakfast-forward menu with espresso drinks pulled on Kingdom Coffee beans, all set against a hand-finished walnut interior that gives the tight footprint a polished, custom feel.
Chef And Roaster Team Up For Midtown Debut
According to The Sacramento Bee, Concept Coffee is owned by Ostrander, Manukyan and partner Oksen Nersisyan and opened yesterday at 1912 P St. The Bee reports the cafe is open daily from 7 a.m. to 4 p.m., with Kingdom Coffee Roasts supplying beans for the drink program. Owners told the paper they meant the launch to be quiet, but the steady crowds made it feel more like an opening party.
From Fine Dining To All-Day Lineups
Ostrander, who built his reputation at spots including Origami Asian Grill and through the Gami Burger pop-ups, is leading the kitchen and the cafe’s savory program. As outlined by Square, Ostrander and his partners have shifted from fine dining to more casual, high-volume concepts in recent years, experience they say helps them run a tight all-day operation. That shows up on the menu in items like a house-made brown-butter Belgian waffle and composed breakfast sandwiches that are built to pair with coffee and move quickly during the morning rush.
A Local Roaster In The Driver’s Seat
Manukyan co-founded Kingdom Coffee Roasters in Folsom and is bringing that roaster’s perspective to Concept Coffee’s espresso and brewed drinks. That partnership means Concept Coffee will pour rotating house roasts and specialty drinks tuned by Kingdom.
Compact Menu, Avocado Mousse And House Chocolate
According to The Sacramento Bee, Concept Coffee’s menu includes several riffs on avocado toast, including one topped with an avocado mousse, along with pastries and breads baked in-house. The cafe is also making its own chocolate sauces and seasonal syrups. The team told the paper the menu is intentionally tight so service can keep pace during busy morning shifts, with Ostrander’s savory lineup designed to complement rather than compete with Kingdom’s espresso program.
Walnut Woodwork And Midtown Energy
As reported by CoffeeFranchiseHub, co-owner Oksen Nersisyan built many of the cafe’s tables, benches, chairs and shelves from black walnut, which gives the room a cohesive, hand-crafted look. The 1,400-square-foot space previously housed Sun & Soil and now aims to function as a low-key hub for cyclists, nearby office workers and neighbors. Owners say they want to strike a balance between quick grab-and-go service and a handful of seats for those who prefer to camp out with a mug.
