Haidilao, the global Chinese hot pot chain known for tableside theatrics and over-the-top hospitality, appears to be on its way to Domain NORTHSIDE’s Rock Rose district, according to storefront signage and state construction filings. The planned restaurant would fill a multi-thousand-square-foot space in the complex and could quickly turn into a reservation-heavy fixture in the Domain dining scene. If the current timeline holds, Austin diners might be twirling noodles in boiling broth by late 2026.
According to the Texas Department of Licensing and Regulation, a project listed as “HaiDiLao Austin” is slated for 11824 Rock Rose, Suite 160, with construction expected to begin March 1, 2026, and wrap up around Nov. 1, 2026. The state filing shows a 7,394-square-foot interior build-out with an estimated price tag of about $2.5 million. It also identifies HaiDiLao Hot Pot Austin Inc. as the facility and names Lin Peng as the tenant on the permit.
Local media have already clocked the development. Reporters at Community Impact photographed signage posted at the space and noted that a representative for the business did not immediately respond to requests for more information. Their story, published Tuesday, highlighted the TDLR filing as the key source for the construction schedule and appears to be the first mention of the project in Austin’s press.
The Domain’s official store directory has quietly joined the chorus. It now lists a Haidilao storefront tagged “Coming Soon” and places it in the Rock Rose entertainment district, according to Domain NORTHSIDE. Rock Rose already leans into a nightlife identity, with bars, restaurants, and late-night spots clustered along the strip, which makes it a natural landing pad for a hot pot concept built around showy service. The listing suggests the center is already promoting the brand to visitors ahead of any formal grand-opening announcement.
What Haidilao Serves And Why It Draws Crowds
A filing with the SEC describes Haidilao’s core play as tableside hot pot, where guests cook sliced meats, seafood, vegetables, and noodles in simmering communal broth. That is paired with a sizable self-serve sauce bar and an array of snacks. The filing and corporate materials also underscore the chain’s focus on performance-style hospitality, including hand-pulled noodle demonstrations and other in-restaurant flourishes that have fueled viral social media attention. Those same touches often translate into long waits and heavy reservation demand whenever a new location opens in the United States.
The company already has a footprint in Texas. Its outpost in Houston’s Katy area has been a destination since opening, and other cities in the state have hosted Haidilao locations that drew substantial crowds at launch. Coverage from the Houston Chronicle has spotlighted details like robot servers and other service tweaks that help the chain stand out, while industry outlet Dallas Innovates has tracked its regional expansion.
What It Means For The Domain
Rock Rose is already marketed as the nightlife and dining hub of the Domain, and a Haidilao location would broaden the center’s Asian dining options while adding another late-night magnet for crowds. The district leans on a mix of restaurants, live music and bars to keep foot traffic flowing well into the evening. Domain NORTHSIDE promotes Rock Rose as a social anchor for both the complex and the wider North Austin neighborhood, a role a buzzy hot pot spot would easily plug into.
Austin’s hot pot scene has grown in recent years, and local lists now include Haidilao’s planned Domain outpost among the most anticipated restaurant openings of 2026. Local guide Austinot advises that newcomers should expect long lines and strong demand early on. That level of interest suggests the chain is likely to become a major draw for North Austin residents and for visitors making a night of it at the Domain.
For now, the state filing remains the clearest public snapshot of the project: the Texas Department of Licensing and Regulation entry lays out the tenant, square footage, and the March 1, 2026, expected start date. Observers will be watching for an official announcement from Haidilao and for updates to Domain NORTHSIDE’s tenant listings as construction moves forward. If everything stays on track, Rock Rose could be bubbling with hot pot before the end of 2026.
