
Breakfast loyalists in Bastrop are about to get a new morning headquarters. First Watch, the Florida-based daytime-dining chain, is set to open its first Bastrop cafe on Monday, March 16. The 3,922-square-foot restaurant will land in Burleson Crossing East at 661 West State Highway 71, Suite 101, serving made-to-order breakfast, brunch, and lunch during its usual daytime hours.
Construction And Size
According to a filing with the Texas Department of Licensing and Regulation, work on the tenant fit-out began Sept. 29, 2025, with a listed completion date of Jan. 6, 2026. The filing describes the project as a new First Watch tenant finish-out covering 3,922 square feet, with an estimated construction cost of $750,000.
When It Opens And What They Will Serve
Community Impact reports the Bastrop cafe will open March 16 and will feature some of the chain's best-known dishes, including the Power Breakfast Bowl, Lemon Ricotta Pancakes, and the Chickichanga. A First Watch representative told Community Impact the company is "excited to become part of the neighborhood," signaling that Bastrop is very much on the brand's radar.
Opening Perks And Hours
First Watch is taking VIP pre-opening sign-ups for the new location and is promoting a free pot of its Project Sunrise coffee during opening week, along with a free tumbler for the first 100 guests on opening day. The company lists the Bastrop cafe's daily hours as 7 a.m. to 2:30 p.m.
A Growing Daytime-Dining Brand
First Watch traces its origins to a small cafe founded in 1983 in Pacific Grove, California, and now keeps its headquarters in Bradenton, Florida, according to Wikipedia. The brand has been in growth mode in recent years. Business Observer reports the chain added a record number of openings in 2025 and had about 633 restaurants systemwide as of Dec. 28, 2025.
