Seattle’s coffee scene is about to get a serious shakeup. Nudibranch Coffee, billed as the city’s first dedicated Thai coffee shop, is set to open Feb. 7 on Capitol Hill, serving espresso-based drinks that lean into fruit-forward and tropical flavors more common in Thailand than in your typical Northwest café. The founders are pitching the spot as a café-slash-community hub where students and neighbors can study, meet up and catch small events.

Who’s Opening and When

Nudibranch is the brainchild of Emily Sirisup and Cole Arnesen, and, as reported by KUOW, the pair plans to open the doors on Feb. 7 in Capitol Hill. They told KUOW’s Soundside program that the idea grew from Sirisup’s connection to Thai café culture and a shared desire to create a welcoming "third place" for the neighborhood. The interview framed the debut as the result of community fundraising and months of slow, steady buildout work.

What To Order

The menu leans hard into Thailand’s climate and flavor palate. Expect fruit-infused coffees, Butterfly Pea matcha drinks, Milo mochas, oliang and a few hybrid espresso cocktails. Eater Seattle detailed those drinks and noted that the team is pairing Thai traditions with local pastries and familiar Pacific Northwest sensibilities. The goal is to slip something fresh into Seattle’s crowded coffee landscape while still keeping things quick and approachable for morning regulars.

Where It Is

The café is moving into the former Mighty-O Donuts space at 1400 12th Ave, at the corner of 12th and Madison across from Seattle Academy and Seattle University, according to CHS Capitol Hill Seattle News. It puts Nudibranch right in the middle of a busy stretch of the Hill where recent openings have leaned toward global flavors and destination cafés. The owners said they are shaping the layout to carve out a quieter study area that can double as a small venue for performances and events.

Community Programming

Drinks are only part of the plan. The owners are pitching Nudibranch as a community hub with a dense calendar of low-cost events, including guest-chef nights, gallery walks, latte-art classes and craft workshops. That programming sits at the center of the business model, and the shop’s website lists more than 30 planned activities aimed at keeping the space lively well beyond the usual coffee rush. The team says keeping events affordable is key to welcoming students and creatives who live, study and work nearby.

Sourcing And Backstory

The founders say they have built direct relationships with growers in Thailand’s Chiang Rai region and are bringing green beans to Seattle to roast locally. Eater Seattle reported that the coffees will be roasted in Seattle and that early batches showed off fruit-forward notes that are not common in mainstream U.S. offerings. That level of traceability is meant to help connect customers with both the origin story and the flavor profile in the cup.

Opening Weekend Notes

Nudibranch’s grand opening is scheduled for Feb. 7, with events and collaborations set to roll out in the weeks that follow. For current hours, event listings and menu updates, the business is posting details on its website and social channels.
