
Kwame Onwuachi’s new Strip restaurant, Maroon, is rolling out a three-day hiring fair as it gets ready to open at SAHARA Las Vegas. The recruiting push is aimed at filling front- and back-of-house jobs, from servers and bartenders to cooks, pastry chefs and sommeliers. Organizers say interviews will happen on the spot, and some applicants could walk out with offers the same day.
According to KSNV, Maroon will host the hiring fair from Tuesday, Feb. 24 through Thursday, Feb. 26, with interviews scheduled from 10 a.m. to 3 p.m. each day inside the resort’s CASBAR Lounge. The station lists open roles that include bus persons, food runners, apprentices and a wide range of kitchen and service positions. KSNV also notes that applicants will receive complimentary self-parking and valet while they attend the event.

SAHARA Las Vegas describes Maroon as a Caribbean steakhouse from the James Beard Award-winning chef, slated to debut early this year in the former Bazaar Meat space. The resort’s materials point to Onwuachi’s track record with restaurants like Tatiana and Dōgon and position Maroon as a key piece of a broader dining refresh. "It’s beyond overdue to have more Afro-Caribbean restaurants on the Strip," the resort quotes Onwuachi as saying.
