Houston’s Northside is getting a serious taco upgrade. Victoria Elizondo, the James Beard-recognized chef behind Cochinita & Co., is bringing a second taqueria to Lindale Park, taking over the former A 2nd Cup space at 4928 Fulton Street. The new spot is slated to open in April as a daytime, breakfast-and-lunch hub.
Elizondo told CultureMap she had previously popped up at the Fulton Street address, and neighborhood enthusiasm made a permanent move feel like a no-brainer. Unlike Cochinita’s East End restaurant, the Lindale Park outpost will skip regular dinner service in favor of “Corimar,” a guest-chef dinner series that will launch once the breakfast and lunch operation is running smoothly. Director of operations Robert Lopez will split his attention between both locations, overseeing staffing as well as pastry, beverages and the packaged-goods arm of the business.
According to Cochinita & Co., the concept has grown from low-key pop-ups and a food-hall stand into a full manufacturing kitchen and brick-and-mortar restaurant that also turns out totopos, salsas and frozen tamales. D Magazine listed Elizondo as a 2024 James Beard Award semifinalist for Best Chef: Texas, following her 2023 semifinalist nod in the Emerging Chef category. Online listings put the East End restaurant at 5420 Lawndale St., Suite 500.
The Fulton Street storefront opened up after community-focused cafe A 2nd Cup announced it would close its Lindale Park location on Dec. 14, 2025, creating the vacancy the new taqueria will fill, as reported by the Houston Chronicle. That exit cleared the runway for Cochinita & Co.’s expansion into the neighborhood.
What Lindale Park Will Get
Locals can look forward to Cochinita & Co.’s signature cochinita pibil tacos alongside breakfast staples and grab-and-go market items, according to the restaurant’s market page. The Lindale Park shop is designed as a daytime anchor for the strip, while the East End location keeps evening service and wholesale production humming.
Next Steps and Timeline
Elizondo told CultureMap the team is aiming for an April opening, with Corimar dinners rolling out a few months after breakfast and lunch are firmly in place. Expect details on soft-opening plans and the Lindale Park menu to land on Cochinita & Co.’s social media feeds and website as the build-out moves along.
