The one-story, roughly 2,032-square-foot coffeehouse is going up on the pad at 7530 SH 121 and will roll out Starbucks’ core beverage menu along with grab-and-go food when doors open next week.

Community Impact reports that Starbucks has confirmed the Feb. 23 opening date and lists the shop’s address as 7530 SH 121. The outlet notes that this location will serve Starbucks’ regular lineup of coffee and tea, plus light breakfast and lunch items, in line with what customers see at most of the chain’s stores.
Permits and project details
State permit filings with the Texas Department of Licensing and Regulation show the project registered as “Hub 121 – Starbucks,” with construction kicking off in February 2025. The estimated cost for the building shell is listed at $1,000,000.
A subsequent TDLR filing tied to the same pad covers the tenant finish-out. That document calls out interior finishes and drive-thru equipment and identifies McKinney Hub 121 LLC as the owner of the site.
What it means for the 121 corridor
The coffee scene along the 121 corridor has been perking up as new retail pads fill in. For context, Black Rock Coffee Bar opened its second McKinney location in mid-2025, according to a company release on GlobeNewswire. With a national brand presence and a drive-up footprint, the new Starbucks is expected to pull in morning traffic at Hub 121 and dial up the competition for smaller local cafés already working the area.
