
Luma, a Mediterranean-inspired restaurant, quietly slipped into SkyBeach Resort's waterfront lineup in January, adding a new stop for sunset views and shareable plates on the south St. Pete shoreline. The kitchen leans into a mezze-first menu, fire-driven entrées and a craft cocktail program that nods to Mediterranean herbs and Gulf Coast produce. Chef Ryan VanDusen runs the show, and the dining room looks directly out over the resort’s marina and the Sunshine Skyway Bridge.
The restaurant officially opened on January 22 and launched with an expansive "Tear + Share" mezze spread, small plates like gambas al ajillo and Florida Gulf ceviche, and larger shareables such as a Mediterranean roasted whole fish, as reported by FSR.
Luma sits inside SkyBeach Resort at 6800 Sunshine Skyway Lane South, in a waterfront room that opens onto the property's recently rebuilt marina. The resort’s contact page lists the address along with reservation details and information for booking marina slips, per SkyBeach Resort.
VanDusen, who previously held leadership roles at Soho House Chicago and the Don CeSar, oversees the kitchen. "This concept reflects a deep commitment to craft and place," VanDusen said, according to Patch.
Menu, Cocktails and Dock-and-Dine Nights
Luma’s menu focuses on shareable Mediterranean fare with Gulf Coast influences, including house-made breads and spreads, fire-grilled skewers and vegetable-forward plates. The restaurant has also introduced a weekly Friday-night DJ in the lounge and a cocktail list that leans on herbs, citrus and regional spices, according to Creative Loafing Tampa.
How Luma Fits in St. Pete
Luma is the third culinary concept SkyBeach has added since the property’s relaunch, joining SkyBar + Grille and Paradeco Coffee Roasters as part of a broader resort repositioning that reopened the hotel in mid-2024. Industry coverage frames the restaurant as a key piece of SkyBeach's effort to draw both locals and boaters to south St. Pete, per What Now Tampa.
