
Downtown Milwaukee’s latest opening is going for full-on dinner drama. Āya, a new Mediterranean spot from the team behind Third Ward favorite Saffron, is set to debut Monday on the ground floor of the Ascent MKE tower at 700 E. Kilbourn Ave. The once-empty shell is becoming a moody, design-forward dining room built around shared mezze, charcoal-grilled skewers, a raw bar, and what the owners are calling an “experiential” cocktail and wine program.
What to expect from the menu
The kitchen is leaning hard into a shareable format, with hot and cold mezze, grilled meats, seafood, and raw preparations inspired by the eastern Mediterranean and the Middle East. A proposed menu filed with the city listed stuffed grape leaves, muhammara, grilled octopus, harissa prawns, and Wagyu carpaccio, according to Milwaukee Record. Owners Fatima and Hanish Kumar say the kitchen will lean on charcoal and wood-fire techniques, giving much of the menu a distinct smoky backbone.
Design, bar and private dining
The Kumars describe Āya’s look as an elegant blend of Middle Eastern and Mediterranean cues, with terracotta accents, plenty of greenery, gold details, and oversized quartz counters, plus a focal 30-foot bar with a chef’s counter and a private dining room, as reported by Milwaukee Magazine. The Ascent’s ground-floor space, once little more than gravel and raw concrete, is being built out into what developers hope will become an elevated downtown dining destination, per the Milwaukee Journal Sentinel. In a press release, the Kumars said the bar program will feature “experiential” cocktails alongside an extensive wine list, according to BizTimes.
Opening, reservations and service plan

The restaurant will start with dinner service only, then phase in lunch and brunch as the team gets into a groove, OnMilwaukee reports. The Kumars, who also operate Saffron in the Third Ward and a sister location outside Wisconsin, say the staggered rollout is meant to give the kitchen time to settle into the new format.

The Ascent, a 25-story mass-timber tower that opened in 2022, has been positioning its ground floor for higher-end dining and retail, and Āya adds another evening draw around Cathedral Square, according to Urban Milwaukee.
