“It’s going to be country-style soul food,” Edward, a co-owner, told What Now. He said the concept grows out of a brick-and-mortar restaurant he operated about 15 years ago, and that a truck this time around lets the team be “more mobile and less expensive.” The owners are targeting an April 1 launch as they finish permits and map out the truck’s route.
