Biance and partner Alan Hamaoui are transforming Unit 116 in a multi-tenant building and tackling the decidedly unglamorous side of opening an ice cream shop: reworking plumbing, electrical systems and interior concrete to bring the more-than-70-year-old space up to code, Business Debut reports.

The plan, according to the outlet, is a layout with a long service counter and indoor seating. The owners told Business Debut they want the flow tight enough that by the time customers finish paying, their orders are nearly ready to grab.

Menu and growth goals

On the menu side, the creamery will lean into "familiar with a twist" flavors, including an "Around the World" series that turns desserts from other countries into ice cream, according to What Now Charlotte. The team is aiming to roll out a new flavor every month.

The Kernersville shop is also meant to be more than a one-off. The owners told What Now Charlotte that this first brick-and-mortar is a step toward building the brand to roughly four shops and increasing production capacity for catering and retail.

Blue Skies is arriving amid a broader wave of independent openings and soon-to-open spots in downtown Kernersville and nearby Winston-Salem, where local outlets have been tracking new restaurateurs and retailers.
