The Well, Nova Hospitality’s health‑minded cafe, is headed for Bouldin Creek this spring, bringing its fourth Austin location to 409 W. Monroe St. The new spot is slated to operate daily and add a weekend brunch service, spread across roughly 3,000 square feet with both indoor and outdoor seating. The expansion extends The Well’s gluten‑free, low‑refined‑sugar approach to the busy South First corridor, according to a company release shared with local outlets.
According to CultureMap Austin, the Bouldin location plans to open daily from 8 a.m. to 9 p.m., with weekend brunch on Saturdays and Sundays from 8 a.m. to 3 p.m. The outlet reports that the interior will seat about 85 people, including a 24‑person private dining room, along with an outdoor dining area within the roughly 3,000‑square‑foot footprint. CultureMap notes that Rituals Creative Studio handled the space design and that the opening was announced via a Nova Hospitality press release, which states The Well is expected to debut “this spring.”
Menu and service
The Well bills itself as a completely gluten‑free concept that avoids dairy, seed oils, soy, refined sugar, and GMOs, relying instead on olive, coconut, and avocado oils in the kitchen. According to The Well, the menus focus on nutrient‑forward plates, bone broths, and seasonal, sustainably sourced proteins, alongside coffee, smoothies, and both alcoholic and nonalcoholic cocktails. The chain also offers catering and delivery through major third‑party services, which the company says will extend to the Bouldin Creek location.
From coworking to cafe
The Monroe Street building most recently housed VUKA, a coworking and event venue, and was previously floated as the future home of a different Nova concept called Monroe. Eater Austin covered VUKA’s closure and the earlier Monroe plan. Nova Hospitality, which operates The Well along with restaurants such as TenTen and Devil May Care, is steering the shift at the address, according to the company’s website. Opting to install The Well at the site marks a pivot toward growing an established brand instead of launching a brand‑new concept on the block.
“Bouldin Creek is a wonderful Austin neighborhood that has held onto its character and sense of community for decades,” Jon Oh, Nova’s culinary director, said in the company release. In the same announcement, Nicole Pfromm added that “there is nothing better than watching someone experience The Well for the first time.” The company has not yet set a specific public opening date beyond the broader spring target.
What it means for Bouldin Creek
The Bouldin Creek Neighborhood Association describes the area as a blend of longtime residents, small businesses, and walkable streets, and The Well’s patio seating and pickup‑friendly setup appear tailored to that environment. For nearby residents looking for health‑forward dining, the newcomer offers a more extensive sit‑down menu than many of the grab‑and‑go options in the immediate area. We will update readers once Nova confirms a soft opening date and any launch events.
