LoHi's skyline views are about to come with a side of brine. Shuck Brothers, a mobile oyster operation that has been popping up around the Front Range since 2019, is settling into a steadier gig this spring with an oyster stand on the second-floor covered patio at Avanti Food & Beverage. The crew plans to bring both East and West Coast oysters, Maine lobster rolls and other raw bar staples to the neighborhood, with service expected to start in early April and the stand closed on Mondays and Tuesdays per earlier reporting. For anyone who prefers their city views with clamshells, the patio is about to get a new draw.
According to the Denver Post, Shuck Brothers will officially open at Avanti Food & Beverage on April 1. The stand will be set up on the venue's second-floor covered patio and serve oysters by the half or full dozen, along with Maine lobster rolls and blue crab cakes. The outlet reports that the stand will be dark on Mondays and Tuesdays.
From food truck to patio stand
The trio behind Shuck Brothers - Jesse Migchelbrink, Riley Campbell, and Garrick Abt - first cut their teeth at Jax Fish House & Oyster Bar, then struck out on their own with a mobile oyster bar concept, as detailed by Westword. The Shuck Brothers website notes the company has been operating since 2019 and posts weekly schedules to Instagram for pop-ups and catering dates, which makes their social feeds the go-to spot for last-minute appearances. The team's festival and brewery circuit helped them refine the menu and logistics before committing to a regular patio setup.
Why Avanti?
Avanti Food & Beverage, a collective eatery in LoHi at 3200 N Pecos St, bills itself as a low-risk launchpad for rotating chefs and concepts, and its second-floor covered patio is a ready-made stage for a raw bar with a view. Avanti notes that the Denver location opened in 2015 and hosts a constantly changing lineup of vendors and events, which makes a traveling oyster bar a natural fit.
Menu and service
Shuck Brothers keeps the menu tight and coastal: oysters on the half shell with house mignonette and spicy cocktail sauce, Maine lobster rolls and peel-and-eat shrimp are all in the mix, and the team has also experimented with fries and rotating dessert collaborations. Westword reports that the group works with purveyors such as Blue Fin Seafood to keep the seafood fresh and traceable.
When to go
The stand is expected to begin service on April 1 and to operate most days of the week, with Mondays and Tuesdays listed as closed in initial coverage. The Shuck Brothers site directs patrons to follow their Instagram for the weekly schedule and details on any special pop-up appearances.

If the Avanti patio run takes off, Shuck Brothers' move could be another example of mobile vendors using food hall and patio slots to test out more permanent concepts in Denver's dining scene.
