As reported by the Charlotte Observer, the Mooresville spot is open daily and serves its “beyond breakfast” menu from 11 a.m. until an 8:30 p.m. close. Nightly entrée specials are starting this week, including a Sunday prime-rib special at market price with two sides. The paper also notes a kids-eat-free Monday deal for one child with a parent purchase. Funk told the outlet he plans to convert area Fresh Egg locations into Funkheizer's over the coming weeks, with a Huntersville Funkheizer's slated for the first week of April and the Cornelius restaurant set to be rebranded in roughly six weeks.

What's on the menu

The lineup sticks to diner comfort with a little Lake Norman polish. Omelettes land around $13 to $14, waffles come in at $10 to $12 and shrimp and grits hover near $16. Smash burgers are four-ounce presser patties, priced around $13 to $14. Salads and larger entrées run roughly between $11 and $28.

There are also a few ringers for people looking beyond eggs and burgers: a crab Benedict at $16, honey-sriracha salmon at $14 and a cast-iron Delmonico steak on the higher end of the menu.

From Fresh Chef to Funkheizer's

Funkheizer's is the latest move from a restaurateur who has quietly built a local mini-empire. According to Cornelius Today, Mel Funk launched the Fresh Chef concept in Cornelius in 2014 and has since expanded to multiple locations, plus a breakfast-focused offshoot called Fresh Egg.

The Funkheizer's format is designed to be easily repeated, with a tighter menu and full bar that Funk says will be simpler to roll out along the Lake Norman corridor.

Local footprint and what’s next

Funk told the Charlotte Observer that Kelly Heizer is a minority partner in the venture and that he ultimately hopes to franchise Funkheizer's. For now, the strategy is straightforward: flip existing Fresh Egg kitchens into the new diner concept and rely on crowd-pleasers like smash burgers and all-day breakfast to bring in both late-morning and evening crowds.

If the Huntersville location opens on schedule in early April, Funkheizer's will have a deeper foothold around Lake Norman within weeks. For locals, the Mooresville diner offers a parking-friendly neighborhood spot that pairs breakfast classics with a simple dinner program and a full bar. Whether it grows into a regional franchise will come down to how quickly Mooresville, and soon Huntersville, can turn curious first-timers into regulars.
