Who’s behind it
Cleo comes from Halley Chambers and Kip Gleize of Three Top Hospitality, the team behind neighborhood spots like Margot and Montague Diner. They discussed the new project on the Wear Many Hats podcast, where they highlighted their focus on small, hospitality-driven operations. Chef Juliana Latif, known for her work at Zou Zou's and in fine-dining kitchens, will lead Cleo’s kitchen, bringing Mediterranean and Middle Eastern flavors to the rotisserie-focused menu.
