The release also laid out the plans for the venue’s dining sections and detailed a slate of production and lighting upgrades.

Who’s behind the relaunch

Kirkendoll Management, founded in 1987 and based in New Orleans, is operating the refreshed Penthouse Club and serves as the brand’s global licensor, according to Kirkendoll Management. The firm has been growing the Penthouse network while standardizing a full hospitality model across its clubs, pulling nightlife operations closer to traditional restaurant and bar playbooks. For Baltimore, Kirkendoll says it has staffed the opening with senior operators who bring decades of nightclub and restaurant experience into the mix.

Penthouse Prime and the food program

Penthouse Prime is set to operate as an in-club steakhouse off a new full-service kitchen and a reserved dining section on the main floor. The menu leans on DemKota Ranch Black Angus beef, with cuts graded above USDA Prime, and a tight cocktail list, according to PR Newswire. The dining program is led by Food & Beverage Director Pete Montecino, who cites decades in restaurant operations, including long tenures with Ruth’s Chris, on his LinkedIn.

Operations and design

Operations for the reboot were steered by Ryan Waterman, Kirkendoll’s vice president of operations, who joined the company after more than a decade on the opening team at Miami’s E11EVEN, according to Kirkendoll Management. The company credits Waterman with building out the club’s operational playbook and leading the Baltimore construction and launch.
