According to KHON2, owner Ryan Ching teamed up with local collaborators to roll out location-exclusive additions and special menu items tailored for Honolulu diners. The station credits local influencer Tommy Oh and chef Dayson of @foodxjitsu with helping craft new dishes for the fresh city counter.
From Kahuku Counter to City Shop
Ry’s started at the Kahuku Sugar Mill, where it built a following for fresh, made-to-order poke that leans on traditional lomi lomi technique and bold island-style sauces. As detailed by the Honolulu Star-Advertiser, that low-key roadside beginning helped grow the fanbase Ching is now bringing into town.

The Honolulu shop’s exclusive offerings range from fried-wonton toppings for poke nachos to other add-ons created just for this counter, while the brand says its mainland outposts in California aim to serve Hawaiʻi transplants and spotlight island products. KHON2 reported that the Pasadena location has grown busier since the mainland expansion and that Ry’s is positioning itself to walk the line between tradition and menu experimentation.
