
Thirsty Planet Brewing Company has quietly pulled off a local comeback, returning to downtown San Marcos with a new tasting room and production facility that puts its onetime favorite Thirsty Goat amber back on draught. The relaunch follows a stretch of contract brewing and a near-closure that left the brand's future looking shaky, and the new spot leans into a beer-garden vibe meant to keep historic downtown buzzing into the evening.
Taproom Moves Into Former Aqua Brew Spot
The tasting room opened March 14 at 110 E. Martin Luther King Drive in the storefront formerly occupied by Aqua Brew, according to Community Impact. The outlet reported that Thirsty Planet had been contract-brewing through Austin Beerworks after its South Congress location closed in 2023, and that the San Marcos site marks the brewery's return to in-house production.
Beer-Garden Feel, With Tanks In Full View
The San Marcos Record noted that the taproom brings a beer-garden theme, with roughly 10 beers on tap and televisions throughout the space, and that patrons can get an up-close look at kettles and fermentation tanks. The Record also describes the MLK Crossroad Center as a roughly 21,000-square-foot site that includes 14 60-barrel fermentation tanks, a production setup that signals plans to scale distribution from San Marcos.
New Owners, Old Founder, And A Production Reboot
Local property owners Jerry Lindenmuth and Mark Shields took ownership of Thirsty Planet and brought back founder Brian Smittle as head of operations, with distribution manager Louie Gonzales calling the return to in-house brewing "a huge stepping stone" for the brand. The facility includes a 30-barrel brew house and a public-facing production area where customers can watch the kettles and tanks at work, according to Community Impact. The team has also said it plans to partner with local charities and programming as part of its community focus.
City Rolls Out The Welcome Mat
The opening featured a chamber ribbon-cutting and a meet-and-greet hosted by the city's Economic and Local Business Development department, the San Marcos Record reported, with city officials suggesting the brewery could help boost downtown foot traffic. Local business leaders at the event described the taproom as a neighborhood draw that fits in with nearby restaurants and nightlife.
Thirsty Planet's website lists the tap room at 110 E. MLK Dr., Suite 130, with current hours Thursday–Friday 4 p.m.–10 p.m. and Saturday–Sunday 11 a.m.–10 p.m., and notes both indoor and outdoor seating. Customers can check the site for menus, event listings, and updates.
