Fred’s Detroit-Style Pizza, the husband-and-wife pop-up that had Harbor Country buzzing last year, now has a permanent home inside Gather in Harbert. Justin and Emily Fredrickson are officially running the pizza show, turning out thick, rectangular Detroit-style pies with the browned, cheesy "frico" edge that fans chase. For locals and weekend regulars, that means a new late-week pizza fix without leaving town.
Where To Find It
Fred’s is posted up at Gather, 13565 Red Arrow Highway in Harbert, working out of Gather’s fast-casual counter and sharing the dining room and bar. The shop is open Wednesday through Saturday from 4 to 9 p.m. and Sunday from noon to 5 p.m., offering dine-in, carryout and local delivery. According to Fred's Detroit-Style Pizza, Gather handles the bar program while Fred’s focuses squarely on the pizza.
Menu And What To Order
The menu changes monthly, usually built around two specialty pies: one meat-focused, one vegetarian, plus a build-your-own option and half-and-half pies for split toppings. Recent standouts on the online ordering board include a Hot Honey Pepperoni and a Double Pepperoni pie, with most pizzas baked in 8x10 rectangular pans. As listed on ToastTab, starters and salads round out the takeout-friendly lineup.
From Pop-Up To A Regular
Fred’s first surfaced as a pop-up in the fall of 2025 and has since settled into a steady weekly groove at Gather. Emily Fredrickson told Harbor Country News that it's very important to us that we deliver a consistently delicious pizza, so right now we’re doing it ourselves. The couple named the business in honor of Justin’s late father, with Justin stepping in as head chef and primary pizza maker, the outlet reports.
What Locals Can Expect
Because Fred’s operates inside Gather, guests can pair their pizza with cocktails, beer or wine from the full bar. The Fredricksons say they may extend hours and expand the menu as the operation grows. For now, the setup is fast-casual: order at the counter, have food run to the table, or call and click ahead for pickup. Per Fred's Detroit-Style Pizza, the team also manages online orders and local deliveries during service hours.
Why Detroit-Style Matters
Detroit-style pizza leans on a medium-thick, airy rectangular crust with a caramelized cheese edge, or "frico," formed when cheese sizzles up the sides of a heavy rectangular pan. The style started at Buddy’s in Detroit and has gone national in recent years, becoming one of the fastest-growing pizza formats in U.S. foodservice. Pizza Today offers a detailed primer on the history and technique behind those crispy-edged squares.
