Founders Edwardo Perea and Alejandro Rodriguez have since drawn a devoted crowd for their street tacos, pambazo, pozole, and a tight list of margaritas and Mexican beers.
Summit Tacos' website now lists the 1149 13th Street address and the August timeline, confirming the Hill as the planned second location. Taking Over a Controversial Spot
The 13th Street address most recently housed Scrooge Sul, which gave up its liquor license after a spring settlement connected to a police investigation into reports of underage patrons and alleged drugging. The Denver Gazette reports the proprietor agreed not to seek a new Colorado liquor license for ten years as part of that deal. That recent history is likely to loom in the background as the new tenant works through permitting and build-out.
Menu And What To Expect
The Longmont Summit Tacos menu centers on Mexico City-style street food, with street tacos, enchiladas, burritos, quesadillas, and breakfast burritos, plus sides like esquites, queso, and guacamole, and sweets such as chocoflan and carlota. The restaurant also serves margaritas, palomas, and Mexican beers, offerings the owners say they plan to replicate in Boulder. Those items are listed on the online menu at Summit Tacos' menu.

Local outlets report Summit Tacos did not immediately respond to inquiries about the Hill plans, and the company has not posted detailed hours or a firm opening date beyond its August target.
