The operation leans into made-to-order banh mi, vermicelli noodle bowls, fresh rolls and matcha drinks for quick grab-and-go meals.
Owner and why he picked Kahala
Owner Vincent Nguy told KITV he chose Kāhala Mall in part because the neighborhood has limited Vietnamese dining options. The outlet also notes the new counter was intentionally built as a small, carry-out focused shop to serve mall traffic and nearby offices. That setup puts Vince’s Cafe squarely in the mall’s growing roster of quick-service tenants rather than among its full-service restaurants.
What’s on the menu
The menu sticks to classic Vietnamese street food: bánh mì sandwiches, vermicelli noodle bowls, fresh spring rolls and Vietnamese drip coffee, with matcha and cold beverages rounding out the drinks list. AlohaStreet reported the shop uses freshly baked French-style bread for its banh mi and plans rotating specials and small catering trays. With its counter-service model, most orders are meant to be takeout-friendly, geared toward quick lunches and snack runs between errands.
Owner brings overseas experience
Nguy operates multiple cafes in Vietnam and is drawing on that experience for the Honolulu outpost, KITV reports. That background shapes the coffee program and sandwich recipes, which aim for an authentic yet approachable flavor profile for island diners. For now, the setup emphasizes daily carryout and small-format orders rather than expanded dine-in service.
