Looking for your next great New American meal in Seattle? These new spots will satisfy all your cravings. Here are the newest places to check out the next time you're in the mood for modern American cuisine.

Addo:incubator

Addo:incubator is a collaborative space that says it's "a restaurant, incubator for food and beverage ideas, pop-up kitchen for up-and-coming chefs and a space for an ever-evolving neighborhood." 

Weekly events include booze nights, guest chef chats and more. Visit its website for more information and reservation instructions. The kitchen is helmed by chef Eric Rivera and his team with Royal Drummer managing the coffee options, reports Seattle Magazine.

With a four-star Yelp rating out of five reviews, Addo:incubator has been getting positive attention.

Yelper Tanner K., who reviewed it on July 19, wrote, "Amazing food and a great concept. You must come and enjoy. The chef Eric has cooked at some of the more famous restaurants in the world and brings his expertise and vision to Ballard."

Addo:incubator is open from 6 a.m.–6 p.m. on Monday, Tuesday, Thursday, Friday, Saturday and Sunday. (It's closed on Wednesday.)

Birch

New waterfront restaurant Birch is headed by chef and owner Jeffrey Kessenich, who provides two dining options: a seven-course chef's tasting where he delivers his favorite dishes or a three-course prix fixe menu.

The three-course meal includes options such as green tomato gazpacho or king salmon tartare for the first course; seared albacore or ricotta gnocchi for the second; and entrees like Alaskan king salmon or eggplant and tomato for the final course. Birch is off to a strong start with a current Yelp rating of 4.5 stars out of three reviews.

Yelper Mariana M., who visited the restaurant on July 26, wrote, "This place is brand new and already impressing with its great food and amazing views of Lake Union and the Space Needle. Staff was attentive, and the ambiance was inviting."

Birch is open from 5–10 p.m. on Friday and Saturday. (It's closed on Monday, Tuesday, Wednesday, Thursday and Sunday.)

Vine & Spoon

Vine & Spoon is a New American spot owned by the F2T Hospitality Group and is headed by executive chef Nicholas Apt, who was named one of Seattle Met's "Next Hot Chefs of 2017," per The Stranger. 

Diners can expect upscale eats with a market-to-table cooking style that includes offerings from sea, garden as well as land. Vegans and carnivores alike will find something to satisfy their cravings, the new establishment says on its website. 

The restaurant's menu includes small bites and large plates. Start off with an appetizer like fresh oysters or beef tartare. Next, choose from options like risotto, gnocchi, New York strip steak or grilled chicken breast with smoked potatoes. (See the full menu here.)

The fresh arrival has proven popular thus far, with a four-star rating out of 51 reviews on Yelp.

Yelper Esther G. wrote, "This place is a great addition to West Seattle! Halibut was perfect and the steak was so so so tender — we have ordered steaks twice as expensive that weren't nearly as good. All the food was light and elegant."

Vine & Spoon is open from 5–10 p.m. daily.

Petite Galerie

Petite Galerie features French-inspired modern American fare and is helmed by chef Rob Sevcik, previously of Rover’s. 

Menu items change frequently, but expect notable lunch options such as Dungeness crab salad and marinated mozzarella sandwiches. For dinner, there's pork loin with couscous; oysters with cucumber and lemon vinegar; and Parmesan risotto with macadamia nuts and snow peas. Take a look at the full menu here.

Yelper Linette T. wrote, "The decor presented a clean elegance that said, 'Here is a comfy space to experience some serious food with time for good conversation.' The staff was attentive and very knowledgeable."

Petite Galerie is open from 11 a.m.–2 p.m. on Monday, 11 a.m.–2 p.m. and 5–9:30 p.m. on Tuesday-Friday, and 5–9:30 p.m. on Saturday. (It's closed on Sunday.)
