Hungry? A new neighborhood vegan restaurant has you covered. Located at 500 N.W. 65th St. in Phinney Ridge, the new arrival is called Papas Hot Potatoes.

It owes its existence to the health problems of chef Chris Blanco, who previously operated Southeast Asian launch spot Stock in the same location, according to Eater Seattle. Having personally switched over to a plant-based diet, so too has the restaurant.

Papas Hot Potatoes specializes in baked potatoes, which come in such versions as The Scream (smoky red chili, vegan cheese, pickled onions and chives) and The Mona (New Mexico green chili, garlic aioli, green chili salsa and pickled jalapeño). Or you can design your own.

Beer and wine are available to drink, as are Mexican horchata and soft drinks.

Papas Hot Potatoes has gotten an enthusiastic response thus far, with a five-star rating out of 11 reviews on Yelp.
