
The small-town sensation of Fredericksburg is about to get a slice of the big city life as Prometheus Pizza, a locally beloved food truck, is set to confidently plant its foot into a more permanent location downtown. Slated to open its doors in the spring of 2024, the artisan pizza joint will occupy a remodeled space at 108 South Lincoln Street, Suite 300, set in the heart of Fredericksburg's bustling downtown area.
With construction set to commence on Thursday, August 31, the project is detailed to run until March 1, 2024. The 2,025-square-foot space will undergo a transformation costing about $250,000 to become the newest culinary destination in Texas' Hill Country. Prometheus is evolving from its nomadic food truck origins to establish more rooted connections with the community through its forthcoming restaurant endeavor, according to MYSA.
Founded by the dynamic duo Christopher Stephens and Rachel Collins Stephens, Prometheus Pizza carved out its niche in the Texan culinary scene with an impressive menu that boldly blends Neapolitan and New York-style pizza with a side of inventive wordplay. Patrons can look forward to pizzas topped with local ingredients and quirky names such as "Breakfast of Champions" and "Hestia Goes to Hawaii," which have become fast favorites, as reported by Austin Eater.
The path to Prometheus's brick-and-mortar expansion has been paved with a rich history in the food industry. Christopher Stephens’ resumed boats of stints at renowned establishments, including Sway and Odd Duck, among others, before the couple ventured into the pizza business. Their journey began at home, cooking for friends and family, and they swiftly adapted during the pandemic with a move into the food truck scene in October 2020. Since then, Prometheus has managed to continually capture the interest of foodies not just locally but statewide, with pop-ups at various esteemed venues across Texas, as per Austin Eater.
