Cambridge's culinary scene is set for a sustainable boost with the upcoming opening of Fallow Kin, a farm-to-table restaurant that promises a dining experience rooted in local ingredients and environmental mindfulness. The grand opening, slated for next Wednesday, marks the fruition of efforts by a trio of friends with a shared philosophy in food, beverage, and hospitality. Fallow Kin will breathe new life into the space once occupied by the celebrated Craigie on Main, nestled conveniently between Central Square and Kendall Square at 853 Main Street.
With a nod to the preservation of nature, Fallow Kin derives its name from the agricultural practice of letting land rest to regain its fertility, according to the restaurant's website. The concept extends to the menu, which is poised to be primarily vegetable-driven, showcasing local produce secured from personal connections with farmers who prioritize sustainable agriculture, this convergence of talent and sustainability is the brainchild of industry veterans Conor Dennehy and Danielle Ayer, known from Talulla in Cambridge, and Marcos Sanchez, whose résumé includes stints at Tasting Counter, Gray's Hall, and Tres Gatos.
Commencing with the festivities, Fallow Kin invites patrons to reserve their spot via Resy for the grand opening. An announcement shared on Fallow Kin's Instagram account details the opening hours: the bar will open at 4PM on a first-come, first-served basis, while the dining room will start serving at 5PM and reservations are recommended; moreover, for the adventurous epicureans, the Chef's Counter offers a Tasting Menu only, with a prepaid experience also bookable through Resy.
Backing the enthusiasm, an inside source confirmed with a local blog about the project's scope and key players all aligning in anticipation for the first wave of customers hungry for a fresh taste, reports reveal.
