The Gibson, a polished new spot tucked off the North Dallas Tollway, quietly opened in November at 17552 North Dallas Parkway after a three-year build that nearly fell apart. The restaurant now fills the corner space that once housed Maguire's, mixing steakhouse muscle with a serious wine program. Husband-and-wife owners Carl and Carrie Britton pushed through a major mid-construction theft to finally flip on the lights for dinner service, where early guests have already clocked the Art Deco chandeliers and swooping central bar.
Carl and Carrie Britton bought the building in 2022 and set out to create The Gibson as a spinoff of their Lubbock fine-dining restaurant The Funky Door, according to CultureMap Dallas. Carrie brings formal wine training to the project: the Vieux Carré "About" page notes she is certified by the Court of Master Sommeliers and holds a French Wine Scholar diploma, and she previously opened The Funky Door in 2010. The owners say the menu leans American with steakhouse touches, while still leaving room for seafood and vegetable dishes.
“In 2023, The Gibson was devastated by thieves,” Carrie told CultureMap Dallas, explaining that vandals stripped copper and wiring, stole equipment and wrecked the HVAC and floors. She said insurance would not cover the theft and that the damage effectively doubled the remodeling budget. Even with those setbacks, Britton decided to finish the build instead of walking away.
Art Deco Style And A Tollway-Side Patio
The Gibson leans into an Art Deco vibe, with polished black surfaces, bronze accents, chandeliers and that dramatic central bar, and the owners added a patio to make the Tollway-side space feel more approachable, according to The Gibson Dallas. The restaurant's website frames the room as both comfortable and celebratory, with photos spotlighting the bar and dining room. Reservations are available through Resy, and the dining room is currently open for dinner service.
Steaks, Small Plates And A 600-Label Wine List
The menu puts steaks front and center, from a Millionaire Ribeye to filets and NY strips, supported by small plates such as crab cakes and other shareable options, while cocktails play a big role at the bar. “The wine list spans 600 labels,” the restaurant notes on its site, and the team says it carries both rare bottles and more accessible picks, according to The Gibson Dallas. The Gibson is currently open for dinner with plans to add lunch in the coming weeks.
Filling A Neighborhood Gap
The Gibson now lists 17552 North Dallas Parkway as its address, the same corner long associated with Maguire's North Dallas in local business directories, making it a direct successor to the former neighborhood fixture, per local listings on MenuWithPrice and the restaurant's ordering page on Toast. Neighbors who once followed Maguire's appear to have an appetite for the Brittons' higher-end menu, and Carrie says community support helped carry the project across the finish line. With dinner service underway, the team is now focused on smoothing operations and rolling out lunch in the near future.
