Insomnia Cookies, the late-night dessert chain built for people who think 11 p.m. is prime snack time, is gearing up to land at College Park Plaza on College Park Drive in Conroe, according to recent public filings. State records show the buildout is set to wrap Jan. 16, 2026, which would put the shop on track to start in-store service and local delivery soon after. The new spot is set to give students and nearby residents in The Woodlands area another option when the late-night sugar cravings kick in.
State records show size and timeline
According to the Texas Department of Licensing and Regulation project listing, the Conroe Insomnia buildout is a 1,214-square-foot tenant finish at 3091 College Park Drive, Suite 123, in College Park Plaza. The filing notes a scheduled construction start of Nov. 21, 2025, and a completion date of Jan. 16, 2026. The document pegs the interior renovation cost at an estimated $241,297 and classifies the work as privately funded.
Menu and service: warm cookies, cookie ’wiches, and vegan options
As reported by Community Impact, the upcoming Conroe shop is expected to provide both in-store ordering and delivery. The menu is slated to include Insomnia standbys such as classic cookies, ice cream, and cookie sandwiches. Insomnia’s own site highlights a vegan, gluten-free chocolate-chip cookie and nationwide shipping, suggesting the new location will likely feature plant-based options and delivery services that line up with what many of the chain’s suburban stores already offer beyond its original college-town model.
A national chain built for late-night crowds
Insomnia started out as a small dorm-room operation at the University of Pennsylvania and gradually evolved into a national brand. In a milestone press release that retraced the company’s history back to 2003, the chain celebrated two decades of late-night cookie runs, coverage that was carried by PR Newswire. National write-ups have noted that Insomnia now reaches hundreds of markets, and People recently pointed to the chain’s more than 300 locations.
What to watch for next
While the TDLR completion date hints at a possible late-January opening window, neither Insomnia Cookies nor College Park Plaza management has announced an official grand-opening date yet. For now, locals will have to keep an eye on Insomnia’s online store locator and watch the signage at the Conroe center for word on the opening and any launch-week deals.
