Joy Wilson, also known as Joy the Baker, has opened The Bakehouse Texas, a monthly pop-up in her Bellville Victorian yard. It offers limited pickup boxes, some morning walk-up treats, capped orders, and pickups scheduled for February 7.

Pre-orders and pickup

Each month, Wilson releases a limited Bakehouse Bakery Box and opens reservations through an online storefront. Pre-order details, pickup times, and logistics live on Joy the Baker's shop, where slots tend to disappear fast. CultureMap notes that the Bakehouse is back on the calendar for pickups on February 7 after taking January off.

What’s in the box

According to Chron, the $40 Bakehouse Bakery Box always includes four seasonal items, all anchored by a signature giant chocolate chip cookie. Previous boxes and soft-opening menus have shown off Wilson’s range: Dad’s sweet potato pie, lemon poppy seed kolaches, chai-spiced apple fritters, cranberry crumble galettes, cheddar-and-chive scones, and oversized Linzer cookies have all had their moment.

Specials and walk-ups

This month’s Galentine’s centerpiece is an eight-inch heart-shaped chocolate cake packed with fresh raspberries and whipped cream, finished in Swiss meringue buttercream and topped with a piped Drake lyric. Buyers pick their team: “No new friends” or “Nice for what.” For anyone rolling up without a preorder, lemon-blueberry biscuits and the Bakehouse’s signature chocolate chip cookies will be available for walk-up purchase from 9 a.m. to noon, along with a complimentary cup of Bellville’s Interstellar Coffee, as reported by CultureMap. “I knew that if I was moving out here, I wanted a house with a story,” Wilson told CultureMap, explaining that the pop-up is designed as a place for neighbors and visitors to actually meet, not just grab and go.

Why Bellville

Wilson describes The Bakehouse Texas as a small-town, small-batch experiment: pastries come out of a garage workshop and a backyard cottage kitchen, with tight limits on availability so most of the experience happens face to face. She lays out the Bakehouse concept, the cross-country move, and the community focus on her site. More background on the project and on Wilson herself can be found at Joy the Baker.

Plan your visit

Boxes are limited and tend to sell out, so a spur-of-the-moment Bellville pastry run could leave you cookie-less if you do not plan ahead. For current menus, exact pickup instructions, and to lock in a box, head to Joy the Baker's shop.
