Chef-partner Daniel Davidson will steer the kitchen alongside Tom Cunanan, the 2019 James Beard Award winner on board as chef de cuisine, turning out a European-inspired, technique-forward menu in a quiet, hospitality-obsessed setting, as reported by CultureMap Houston.
According to CultureMap Houston, The Green Room will open for dinner on Thursday, March 5, tucked into the same building as Heights & Co. It is part of the Doke Concepts portfolio, which also operates Heights & Co. and Lazy Lane, with Davidson listed as chef-partner and Cunanan as chef de cuisine.
Small Room, Big Names
Partners Brian Doke and Evin Woods want the room to feel "exciting but never intimidating," with service that feels personal from the moment guests walk in, as detailed by Community Impact. In the kitchen, Davidson will lead the charge, with Cunanan serving as chef de cuisine and Skyler Bancroft stepping in as sous chef after time with Bludorn Hospitality. It is a heavyweight team for a neighborhood dining room that tops out at just 26 seats.

The menu will rotate every month and is set to include dishes such as scallop crudo, sliced hamachi, crispy duck, roast chicken with salsa verde, salmon en croute, smoked bucatini with shrimp and an heirloom tomato tarte tatin. The Green Room will offer both an à la carte selection and a five-course Chef’s Dinner Party, which comes with a complimentary glass of wine or a cocktail. The wine list will highlight grower champagnes and certified-organic producers, with many bottles priced at $100 or less, plus a separate Cellar Series featuring premium by-the-glass options, according to CultureMap Houston.
