
Odd Rabbit, a new sushi-centered restaurant from Christopher and Ariana Teigland, is set to open this spring, currently projected as spring 2026, at 5845 Arapahoe Avenue in Boulder. The couple, known for Denver's glo Noodle House, is positioning Odd Rabbit as a playful, non-traditional sushi room that will also bring back noodle dishes and other plates from their previous menu. Diners can expect precise nigiri, hand rolls and sake flights alongside ramen riffs, in a space that will feature a chef's counter and a roomy patio. The opening brings a well-known Denver dining team into Boulder's restaurant scene.
Space And Design
The restaurant will span just under 3,500 square feet inside, with roughly 1,500 square feet on the patio, and will seat about 90 guests indoors, including a 10-seat chef's counter, plus room for roughly 40 on the patio. Interiors are being handled by Arrow B Architecture, while Zocalo Community Development is serving as general contractor, and the site sits two blocks from Blackbelly Market & Restaurant. Odd Rabbit is slated to open in spring 2026, according to Mile High CRE.
Menu And Team
"I wanted to slow things down and really focus on the beauty of simplicity," Christopher Teigland said. The menu will highlight nigiri selections such as hamachi, uni, and spicy tuna alongside sushi specialties like salmon sashimi and tuna tataki. Chef Stephen Nguyen, who has worked at Temaki Den and helped launch sushi at Uncle, will oversee the sushi program. The beverage side will center on curated sake flights designed for both the sake curious and the more seasoned drinker, according to Mile High CRE.
From Glo To Boulder
The Teiglands' Denver restaurant, glo Noodle House, has helped cement their reputation across Colorado and was recognized with a Bib Gourmand listing by the MICHELIN Guide. That distinction is noted by MICHELIN Guide, and more on their Denver outpost is available at glo Noodle House.
