The Toasted Yolk is heading to Bastrop’s Sendero development, with permit filings pointing to a new sit-down brunch spot built around a sizable patio. Construction is slated to begin next Monday and, if the current schedule holds, the buildout could wrap by mid-May. The addition would drop another full-service breakfast and weekend cocktail option into the already busy Hwy. 71 retail corridor.
According to What Now, which reviewed a Texas Department of Licensing and Regulation filing, construction is scheduled to start next Monday, Feb. 16, with a projected completion date of May 18, 2026. The filing lists an estimated $865,000 construction budget and includes plans for an 811-square-foot dedicated patio. What Now also identifies the unit as 853 W. State Hwy. 71, Suite 150, in the Sendero retail phase.
Where It Will Sit
Sendero is a 75-acre mixed-use development along Hwy. 71 that is rolling out its first commercial phase of retail and dining. Per Community Impact, the early tenant lineup includes national names such as Chuy’s Tex-Mex, Texas Roadhouse, Jersey Mike’s and Scooter’s Coffee, alongside apartments and public green space. The Toasted Yolk would plug into that mix and aim to catch both nearby residents and Hwy. 71 pass-through traffic.
More Central Texas Growth
The Bastrop plans track with The Toasted Yolk’s recent expansion across Central Texas, as the chain has opened or filed permits for new cafés in suburbs such as Kyle and Round Rock. Hoodline covered those moves; see Toasted Yolk Coming To Kyle and Round Rock H‑E‑B Strip for local reporting. State TDLR project pages also show recent Toasted Yolk tenant filings in the region, underscoring a coordinated franchise buildout effort.
What They’ll Serve
The Toasted Yolk leans on hearty breakfast plates and boozy-brunch staples, from its signature grilled egg-in-sourdough to skillet scrambles and afternoon-leaning brunch cocktails. The brand’s menus and rotating seasonal specials are listed on the Toasted Yolk website, with operators often featuring chef-driven limited-time dishes. The chain was founded in Conroe in 2010 and has steadily expanded across Texas and the South, according to regional coverage of its growth.
What Now reports that it reached out to franchisee Josh Ellis about the Bastrop project, but Ellis was not immediately available for comment. Developers and franchise partners have not yet announced a formal grand-opening date beyond the construction timeline described in state filings.
Timeline And What Comes Next
Local development officials say Sendero’s commercial phase is expected to keep filling in during 2026 as retailers and restaurants complete their tenant buildouts, and the Bastrop EDC lists the project among several retail additions headed for the Hwy. 71 corridor. Residents should start to see more visible site activity in the coming weeks as the center’s early retail projects move from permits into active construction. Observers will be watching for a soft-open or grand-opening announcement from the franchisee or developer as work advances.
